Story Behind The Label
The shape on the label is the single site Cabernet Sauvignon vineyard on our estate. The 68 lines represent the exact number of rows in the block. As 4th generation grape growers we wanted our Estate range to reflect our love of the land.
The Fruit
Grown on our Estate at Whistler Wines, Seppeltsfield Road, Marananga, Barossa Valley. Clone D3V14 planted in 1997 on a lovely south-east facing slope with lots of broken quartz in the soil.
Winemaking
Traditional open fermentation using wild yeast, with a total maceration of 3 weeks. The wine was gently basket pressed before going to oak. This wine was matured in 20% 1 year old French oak hogsheads along with 70% in seasoned French oak Puncheons. Elevage took place for 18 months before blending and bottling with no fining.
The Wine
Very bright & deep red colour in the glass. This is a typical Barossa Cabernet Sauvignon with loads of bright red fruit/cassis and dried herbs on the nose, with hints of dark peppermint chocolate. The palate is full of pure red & dark fruits with fine grained tannins. This wine has a long life ahead with careful cellaring.
