We feel like we are hitting our strides with this fruit. The wine making seems to become simpler every year and we are enjoying the wines more and more. Bring fruit back to winery, transfer to 2000LVC tank without crushing any berries. Drop the lid, check it every now and then and one or two pump overs throughout the fermentation and then press after three to four weeks. The wine is pressed to stainless steel for a quick post fermentation settling prior to being sent to 1000L amphora and foudre for maturation. This wine spent ten months in these neutral vessels prior to bottling without fining or filtration.
