Paper Mâché Pinot Gris, made by Ashley Ratcliff in South Australia’s Riverland, offers a textured, skin-contact interpretation of this Alsatian classic. Wild-fermented, unfined and unfiltered, it pours a hazy golden hue with lifted notes of poached pear, quince, and orange blossom. The palate is dry and gently grippy, showing layers of stone fruit, ginger spice, and a savoury edge balanced by fresh acidity. Minimal sulphur and natural handling give it a rustic charm and real sense of place. Vegan friendly and sustainably farmed, it’s ideal with spiced roast vegetables or soft washed-rind cheese. Serve slightly chilled, not cold.
