La Gritona Reposado Tequila is a small-production tequila distilled by Melly Barajas and her all-female team at their distillery in Valle de Guadalupe, Jalisco (NOM 1533).
Made exclusively from mature agave, typically aged between 8–10 years, the plants are sourced from the iron-rich red soils of the Jalisco Highlands and harvested at peak sugar concentration. The piñas are placed into traditional thick-walled ovens within 24 hours of trimming, steam cooked for 24 hours, then rested for a further 24 hours before crushing.
The extracted juice undergoes natural fermentation in open steel vats for around 8–12 days, depending on the local temperature. Following fermentation, the tequila is twice distilled before resting for six months in previously used American whiskey barrels, including barrels from Jack Daniel’s and Balcones. La Gritona has always been produced without additives.
Production avoids diffusers and autoclaves. The cooked agave is crushed using a steel mill, with distillation taking place in steel stills fitted with copper coils. Every stage of production occurs under one roof and is overseen by a small team of local women who work across the process from beginning to end.
Sustainability also plays a role in production. Spent agave fibres are supplied to local farmers for use as cattle feed, while La Gritona’s distinctive bottles are made in Mexico City by Pavisa Glass using 100% recycled glass.
In the glass
La Gritona is notably different from many traditional reposados. It is low in perceived sweetness and retains the aroma and character of the agave itself. Despite six months in oak, it remains fresh, herbaceous and vegetal rather than dominated by vanilla, caramel or whiskey-like barrel flavours.
There is a crispness reminiscent of a quality blanco, complemented by the softer, rounder texture developed through ageing. The finish is smooth, bright and clean.
Tasting Notes
Nose: Garden greens, raw agave, white flowers and mint
Palate: Cooked agave, vegetal notes, black pepper, cinnamon and freshly cut grass
Finish: Bright, punchy and rounded
Best enjoyed neat, or alongside a cold Mexican lager or pilsner.
