This isn’t your everyday rosé. Direct-pressed Shiraz brings a vibrant pink hue and a surprising depth of flavour, bursting with concentrated apple, watermelon and a bright line of acidity. A whisper of savoury rose-petal on the finish keeps things poised between juicy, refreshing and quietly complex. Half of the wine rests in tank, the other half in a ceramic egg, giving it both lift and texture. Bottled with a gentle 30mg/L SO₂.
Château Acid is the work of long-time mates Simon Jones and Charlie O’Brien, who launched the label in 2017. Their fruit comes from Rosnay Estate near Canowindra in the NSW Central Ranges - a certified organic and biodynamic vineyard that’s never seen chemical sprays since planting in 1997. Warm, dry days, cool nights and a mix of sandy decomposed granite, quartz and clay create an ideal environment for Mediterranean varieties, which develop a natural savoury edge and mineral drive.
Now seven vintages in, the duo have honed a low-intervention approach that centres on energy, purity and expressing the life of this untouched site. All wines ferment wild, age on full lees, and rest anywhere from 9–12 months (with Chardonnay taking two full years). Each variety finds its perfect home: ceramic eggs for the rosé, terracotta amphora for Vermentino, old oak for Chardonnay and Shiraz. With thoughtful élevage and minimal sulphur, the wines land in bottle open, expressive and beautifully stable.
