Winemaking / Farming Techniques: Crafted using a unique “Modern Ancestral” method that bridges traditional and pét-nat techniques. The base wine is fermented dry in tank before bottling for lees aging, as in the traditional method. It’s then disgorged without added sugar, relying on its own natural grape sugars for effervescence, a nod to pét-nat’s spontaneous sparkle.
Style/Body: Light bodied, textured and expressive with a naturally lively fizz.
Tasting Notes: A delicate, pale rosé hue with lifted aromas of strawberry and cherry, underpinned by subtle leesy complexity and vibrant, refreshing energy.
