What it's like

Pineapple and lime notes are complemented by subtle umami notes, driven by a generous freshness and minerality. The 2025 is much closer to a white wine than previous vintages.

Serve cold. The absolute perfect pairing for sashimi or oysters – we’ve even been known to drink it straight from the shell.

Production

100% directly gently basket pressed to old French oak barrels, with a small portion of the skins thrown back in until just before bottling. Bottled in January 2026.
