Strawberry, Dried Thyme and Sour Cherry on the nose with Tart Cranberry, Raspberry Compote and Creaming Soda on the palate. The juxtaposition between the sweet and savoury is at play with texture from pressings barrels providing a crunch and interest that draws this pet-nat into an all new space. - Winter is the perfect time for this one!

Syrah rose was fermented and aged in stainless steel with a barrel each of Chardonnay and Sauvignon Blanc (selecting for pressings only) blended to create the base wine. The juice of cabernet sauvignon was added prior to bottling to allow secondary fermentation to take place in bottle. The wine is un- disgorged to retain texture and richness from the chardonnay and sauvignon blanc lees.
