The nose has a spicy phenolic character, the palate a richness of butter and hazelnut, But also citrus and freshness. After early careers in music, they shifted their creative focus to wine, dedicating themselves to making pure, energetic expressions of place. Since 2017 they have refined a minimal-intervention approach that allows their fruit to speak naturally.\u003c\/p\u003e\n\u003cp data-start=\"1076\" data-end=\"1515\"\u003eTheir wines are made from a single certified organic and biodynamic vineyard in Canowindra. Everything is hand picked and processed in their cellar with a light touch. There is no fining or filtration, and the only addition is a small amount of sulphur when required.
