Back in the winery we fermented the grapes in amphora and one ton open fermenters then pressed off post ferment. After settling, the wine was added back to the clay pots for a further 7 months then to ageing. A 15% splash of Nero d’Avola added acidity, tannin and a touch of the exotic. Only 200 cases made.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e“Deep purple in the glass, the nose is vibrant and sweet fruited. Aromas of grapes, oyster shell, earthy clay, black jelly bean, black tea, jerusalem artichoke and orange peel. On the palate it’s smooth and seductive, dark cherries, spiced plum.
